Cheese, Courgette and Chives
1/2 tub Philadelphia Cheese
1 tbsp milk, to loosen
1/2 grated courgette
1 tsp fresh chopped chives
Zingy Tomato and Coriander
2 large tomatoes, chopped, then left in a sieve over a bowl to drain some of the water
2 tbsp fresh chopped coriander
Juice of 1 lime
Avocado and Lime
Scooped out flesh of 1 avocado
1 tbsp chopped coriander
1 tbsp chopped flat-leaf parsley
Squeeze of lime juice
Serve with carrot batons, vertically-halved baby sweetcorn, fingers of fresh bread, sliced cucumber and sliced peppers.
