King Oyster Mushrooms on Sour Dough Bread, Lay The Table


My local supermarket has started selling these big, meaty mushrooms which are perfect for a hearty vegetarian breakfast. Also known as trumpet mushrooms, they are fantastic thickly sliced, fried in olive oil and butter, then served on toasted sour dough bread. I rubbed the bread first with raw garlic, then sprinkled over some grated Parmesan and parsley leaves to finish. Very very simple.
