Kids Jubilee chicken in crisp lettuce wraps, Lay The Table

This is a Jub-ilicious (thanks  to @mustntgrumble for the painful pub!) recipe is a twist on Coronation chicken and my kids love it. 

It takes about five minutes to make, and you can use leftover chicken from the Sunday roast. You can any kind of crispy lettuce iceberg, baby gem, cos for the wraps. And if you have any left over (you wont), the chicken mix makes great sandwich filling.

Serves 2-4

Leftover chicken, shredded, or chicken from 2-3 roasted legs, or shop-bought cold roast chicken
Lettuces leaves, whole
2 tbsp low-fat creme fraiche
1 tbsp mayonnaise
1 tbsp korma curry paste
1 tbsp mango chutney
1/2 tsp black pepper

1. Lay the lettuce leaves out so they make a bowl.

2. Mix the chicken with the rest of the ingredients.

3. Divide the chicken mixture between the lettuce wraps.

4. Enclose and serve.
