My kids love this simple slow cooker sausage hotpot. The apples give it a sweetness, as well as the health benefits. But theres so much more thats good for them too: carrots, peppers and tomatoes. I cooked this in the slow cooker, but you can also use a casserole dish. If theres any gravy left over, use it for your Sunday roast, especially with pork. Its delicious.
2 tbsp olive oil
4-6 good quality sausages
Half onion, chopped
1 carrot, sliced
2 eating apples, cored and roughly chopped
Half red pepper, deseeded and sliced
1 tsp mixed herbs
300 ml chicken or vegetable stock
8-10 cherry tomatoes, halved
Small tin baked beans
1. Heat the oil in a large frying pan and cook the sausages for 10 mins. Remove and chop into chunks.
2. Wipe the pan clean and add a little more oil. Cook the onion, garlic, carrot, apple and pepper for a few mins. Add the herbs and stir through.
3. Add the stock and transfer to a slow cooker. Cook on LOW for 2 hours, until the veg and apples are tender.
4. Add the tomatoes and beans and stir through. Serve in bowls.
