Using just four ingredients, this is about as simple as a kids dinner dish gets (OK, five, if you include the oil. OK, OKAY..six if you include the salad).
1 tbsp vegetable oil
3-4 good quality pork sausages, skins removed
1/2 onion, finely chopped
2-4 tbsp mascarpone cream cheese
2 handfuls dried fusili pasta, cooked according to packet instructions, approx. 9-10 mins
1. Heat the oil in a large frying pan and gently cook the onions for 3-4 mins until soft. Add the skinned sausages and break up with a wooden spoon. Cook for 4-5 mins, until some of the sausage meat becomes brown and crispy.
2. Add the mascarpone and stir through. Add a couple of tablespoons of water from the cooking pasta if it becomes too dry.
3. Drain the pasta and add to the sausage mixture. Stir to combine.
4. Serve with green salad.
