Dont send the kids down to the kebab shop make them at home. And chuck in some spinach and mint for added nutritional value. These Lamb, Spinach and Mint Kebabs are very quick and simple to make and the kids think theyre grown-up food. Serve with a dollop of Greek natural yoghurt, a few tomatoes and some cucumber slices and this is a very healthy fast food meal that puts any kebab shop to shame. 

Serves 3-4

500g lamb mince
Big handful of young spinach leaves, finely chopped
6-8 mint leaves, finely chopped
3-4 tbsp Greek natural yoghurt
Hot dog rolls or burger buns, tomatoes and cucumber, to serve

1. In a bowl, squish the lamb together with your fingers and form into sausage shapes.

2. Mix the spinach and mint together and roll the lamb sausages in them.

3. Thread the sausages onto metal skewers. Preheat the grill to medium. Lay the kebabs onto a write rack or foil covered roasting try and cooking for approx. 5 mins each side.

2. Once cooked, carefully remove the kebabs from the skewers and serve with the yoghurt, buns and salad.
