Happy Flag Day!, Lay The TableI wanted to do a little something for Flag Day today so thought I would take some treats to the kids in my Sunday School class:) I actually baked blueberry muffins to start with, but somehow the oven got bumped up(Jim?) and so even though I took them out early they were a bit overdone and were stuck in the muffin pan-Arrrgh! They are still tasty though:) I still wanted to take something even though time was not on my side…I decided to whip up a second-generation family favorite…Cocoa Oatmeal Cookies! They are a “no-bake” cookie and take no time at all to make:) Full recipe is at the bottom.

Happy Flag Day!, Lay The TableFirst you bring the butter, cocoa, milk and sugar to a full rolling boil and boil for 70 seconds.

Happy Flag Day!, Lay The TableThen quickly add this mixture to the (waiting) bowl of oats, peanut butter, vanilla and salt.

Happy Flag Day!, Lay The TableDrop by spoonfuls onto a baking sheet lined with wax paper and refrigerate until firm:) That’s it! And they are so YUMMY!!! This cookie has been my favorite since I was a small child:) My brother and I would always request these for our birthdays and any special occasion, for that matter!

Happy Flag Day!, Lay The TableHere’s the recipe…my mom wrote it out for me many years ago and I have it hanging in my kitchen 🙂

COCOA OATMEAL COOKIES

In large mixing bowl put:

3 cups oats
1/2 cup peanut butter
1 teaspoon vanilla
a pinch of salt Set this bowl aside

In a large saucepan put:

1/2 cup butter
2 cups granulated sugar
3 heaping tablespoons cocoa(my mom actually used Neslte’s Quik and so do I)
1/2 cup of milk

Bring this mixture to a full rolling boil(stirring) and boil for 1 minute and 10 seconds(If you don’t boil it long enough it’s too gooey, and if you boil it too long, it’s too dry).

After boiling, immediately add this mixture to the bowl with the dry mixture and mix well.

Drop by spoonfuls onto the wax paper lined baking sheet and refrigerate until firm. ENJOY!
