Double-Decker, Personalized Apple Cookies for Back-to-School, Lay The Table

It’s that time again!  Summer is over, here in the U.S. anyway, and it’s time to start a new school year!

I wanted to make some cookies for my grandchildren, and thought it would be fun to personalize them with their first initial.

I really like the effect of the chalkboard letters on the apples and hope my grandchildren (and you) do too!

Five of them are in elementary school and three are in preschool, so eight special apple cookies were in order. The youngest two are still babies, and another is on the way next month! Yippee!

I love each of them so much, and I hope that they all have a wonderful school year!

Double Decker Apple Cookies

Ingredients:

Apple cookie cutter

Letter cookie cutters (small enough to fit nicely on the apple cookie)

Gel paste food coloring (Except for the green, I used AmeriColor): Super red, Wilton leaf green, Chocolate brown, Super black, Bright white

Black food marker (Foodoodler)

Directions:

1. Bake cookies according to directions. Mine are 3/8-inch thick for the apples and 1/4-in. thick for the letters.

2. Tint a portion (most) of the royal icing red, then black, brown and green.

3. With a #3 tip, outline and fill the apples with the red royal icing (medium consistency-thick enough to outline, but thin enough to fill in). Fill in the leaves and the stems too with a #2 tip. Set aside to dry for about a couple of hours.

4. With a #2 tip, outline and fill the letters with the black royal icing. Set aside to dry for about an hour. 

5. Apply black royal icing to the backs of the letters and place gently (but firmly) on the centers of the apples.

6. Leave cookies to dry overnight.

7. With the black food marker, make stitch marks around the edges of the apples.

8. Using a small paint brush (for food only) and white gel food coloring, paint messages onto the apples. (If you’d prefer, you can paint the messages before you adhere the letters to the apples.)

Let dry.
