Sirloin Steak Marinated in Beer and Brown Sugar, Lay The Table

Of all the cuts, sirloin steak is my favourite. In this recipe, Ive marinated it in beer, teryaki and brown sugar. The results were savoury and sweet. Very nice. And although the steak (from my local M&S) wasnt the best Ive ever tried, it did the job for a Friday night.

Serves 2

200ml dark beer (I used Porter)
100ml teriyaki marinade
2 tbsp brown sugar
2 sirloin steaks (I got mine from M&S, costing a tenner per steak)
1 tsp salt
1 tsp freshly ground black pepper

1. Whisk together first 3 ingredients in a large shallow dish or zip-top plastic freezer bag.

2. Trim the steaks then add them to the marinade. Cover or seal, and chill 24 hours, turning once.

3. Heat a grill pan on the hob until smoking hot. Remove the steaks from the marinade and pat dry. Reserve the marinade. Oil the steaks and cook on each side for approx. 2 mins per side for medium-rare. Slice before serving.

4. Pour the reserved marinade into a small pan and bring to the boil. Reduce until you have a sticky jus. Serve with chips and sautéed mushrooms, with the jus poured over the steaks.
