Gosh it feels so long since I’ve done a post and we’re already more than halfway through January! In 2 days turn I will turn 30, a prospect that seemed impossible when I started this blog nearly 6 years ago. This year is also the year that I’m getting married and I’m now on a mission to get all the finishing touches sorted.
Stereotypically for the New Year I am on a bit of a health kick after I got on the scales after Christmas and discovered I’d put on 5lbs! Fortunately I’d started going to the gym back in October so I’d already started to get my fitness up. Now I need to focus on my diet – reducing processed fats and eating a varied diet, avoiding carbs in the evenings and keeping control of my portion sizes.
Healthy food doesn’t have to be tasteless or boring so inspired by my delicious avocado breakfast I decided to look through my pins and find something tasty makes to keep up your motivation to get through January and beyond.
Coconut flour flatbread – only 80 calories!
Basil Beet Burgers with Lemon Garlic Aioli
Grilled pineapple and coconut guacamole
Tomato and zucchini (courgette) frittata
Raw vegan key lime pie ice cream
Muhammara – a Lebanese dip
And finally, if you need a chocolate baking fix, these brownies are kind of healthier. I just made a batch and can testify they’re delicious.
I really like the look of those coconut flour brownies, I need to find some of that stuff for sale and make something similar.
Basil Beet Burgers with Lemon Garlic Aioli looks very interesting, I’ll give it a try!
