A crispy thin Swedish waffle

  • 170g plain flour, sifted
  • 250ml Oatly cream
  • 100ml really cold water
  • 2 tsp dairy-free spread, melted
  • Oil for greasing
  1. In a medium bowl, whisk together all the ingredients until you create a smooth batter. Cover and refrigerate for at least 1 hour.
  2. Oil the waffle iron and pre-heat.
  3. When the waffle iron is ready, remove the batter from the fridge and carefully spoon about ½ to ⅔ ladle of batter into each waffle shape, spreading out the batter into the edges if needed (a silicon pastry brush is useful here).
  4. Close the lid and cook for 5-6 minutes until crispy.
  5. Remove carefully and top with fruit of your choice.
  6. Can be frozen - just wrap them tightly in cling film individually. To reheat from frozen, pop them under the grill or in the toaster.
